Veg Crispy



Chopped Vegetables  2 cups, cut thinly
(Cabbage, cauliflower florets, carrot, capsicum, onion, french beans,babycorns) -- as per your choice
For Batter:
Maida     10 tblsp
Cornflour 5 tblsp
soyasause 1tsp
vinegar 1/2 tsp
salt to taste

For stir fry:
oil 1 tblsp
chopped garlic 1 tblsp
ginger paste 1/2 tblsp
Green chillies 2
spring onion 1/2 cup
soya sause 1tbsp
red chilli sause 1tbsp
vinegar 1tsp
ajino moto 1/2 tsp
salt to taste
Water 1 tbspn



Mix all ingredients of batter to make thin batter.
Add all chopped vegetables into batter and make them well coated
Deep Fry the vegetables in heated oil, and keep them on absorbent paper.
Take another Pan, heat oil in a pan.
Add garlic, ginger, greenchilles,spring onion and saute for 1 minute. add sauya sause,red chilli sause, vinegar,salt and ajinomoto. add all fried vegetables and mix well.(cut vegetable fried pakoda if needed.)
sprinkle water on it. cook for one minute and mix well. Garnish with spring onion.
Hot Veg crispy is ready to serve.
Tip:  You can add pieces of paneer too in mix vegetables.

Fried rice


Ingredients:

2cups Rice
4cups Water(to cook rice)
4tsp Garlic chilli paste
4tsp  Ghee
1cup  chopped vegetables(Carrot, frenchbean, small florets of cauliflower,capsicum,spring onion)
Salt to taste
Garnishing:
Carrot flowers, tomato, pomogranate seeds.

Method:

Soak rice in warm water for 10 mins, then Microwave it on high for 12 mins.
Heat Ghee in a large pan on high flame,
Add garlic-chilli paste and spring onion till it becomes transparent.
Mix all vegetables (you can add yello-red bell papers, broccoly, depends on your choice)
cook it on High Flame for 2 mins.
Add cooked rice and again add some quantity of spring onion.
Add salt to taste and mix well, cook it for about a minute.
Remove from the heat and garnish with some carrot flowers.
Quick and Delicious Fried rice is ready to serve.


Chocolate cake


Ingredients
125gm maida
1 tsp vanilla essence
2 tsp baking powder
1/2 tsp soda bi-carb
2 tbsp drinking chocolate
4 tbsp cocoa powder
2 tbsp curd
100 gm melted butter
100 gm powdered sugar

Method:
Mix Maida, Baking Powder, cocoa powder and sieve it together.
Mix together Curd, Soda-bi-carb. and give rest to 3 minutes.
Mix Melted butter, poweder sugar,water,vannila essence, curd mixture.
Add the flour mixture and mix well.(there should be dropping consistency)
Transfer the mixture into the greased microwaveproof bowl
Microwave on high for 6 minutes.
For Icing:
Take butter in a bowl and mix icing sugar, cocoa powder slowly till proper consistency.
spread over a cool cake evenly, and decorate like your way.
I decorated it with Gems and bytes, because my son love it too much.

Mix Vegetable Khichdi


This Recipe is approprite for kids and for lunch-box too,

1 cup rice
1/2 cup green gram divide (moong dal)
1 1/2 cup chopped Vegetables(frenchbeans,cauliflower,carrot,
            capsicum, onion, tomato, green peas)
4 cup water
1/2 tsp turmeric powder
Salte to taste
1/2 tsp coriander powder
1tsp chilli powder
1tsp lemon juice
1/2 cup curd
1tsp Kitchenking masala
1/4 cup coriander
TEMPERING:
cuddy patta
dry chillies-2 pcs
1 tsp cumin seeds
a pinch asafoetida
2 tblsp ghee

Method:
Wash rice and dal together.
Heat up the ghee/oil  in a pressure cooker and mix in cumin seeds and asafoetida, dry chillies nd cuddy patta. when the seeds crackle mix in the all chopped vegetables. cook on low flame for 2 mins.add mung dal and rise ,stir fry for 2-3 minutes again.
Mix in all masalas(herbs) above mentioned, curd,lemon juice,salt in it and continue to stir fry for 2 minutes on .
Mix in 4 cup of water(multiply 2.5 times-mixture of dal-rise)
Cover and stir fry on fast flame till one whistle and 2-whistle with low flame.
Garnish with pure ghee, curd. serve with papad.
Tip: choose unpolished rice to increse  nutricious value.

Khandvi

Hi,
This is my first Recipe in this blog.I want to start it with one Gujarati, very popular recipe-Khandvi:






Ingredients:
1 cup: Gram flour (Besan)
1 cup: Curd
1 cup: Water
1 tsp: Ginger-Chilli paste
½ tsp: Chilli powder
1/4 tsp: Asafoetida
1/2 tsp: Turmeric
1 tsp: Mustard seeds
2 tsp: Oil
Salt  to taste
Coriander-chopped fine
Grated coconut
Prepreparation:
.Grease the reverse side of a few thalis or on cleaned marble Kitchen-platform with a little oil.

Method:
Sieve besan and mix together curd, green chilli-ginger paste, turmeric powder, and salt with 1 cup of water and make a smooth paste till no lumps are left.
Transfer into a non-stick pan and heat on a low flame(low flame-compulsory), stirring constantly so that lumps do not form.
Keep stirring till the batter becomes thick(Tip:It will leave nonstick’s surface when it is ready to spread). This will take about 8-10 mins.
Quickly spread mixture over the greesed thali or platform as thinly as possible with spatula while the batter is still hot.
When spreading is finished, roll up it carefully.
Cut 1" pieces out of each big roll to bite-size and place these directly on a serving dish.

Tempering:
. Heat two tablespoons of oil and add a pinch of asafetida,chili poweder, kadipatta and mustard seeds and green chilies stir for few seconds and pour over the pieces with spoon..
Garnish with fresh coconut and coriander. (my husband doesn’t like coriander, so I haven’t use it).
Serve Hot.

Tip:   Take Equal Proportion of Beasan-curd and Water(Easy way to remember). .
            Try out with small portion first. It takes some practice and patience too. It requires your full attention.
